What is more comforting than creamy tomato soup and a grilled cheese sandwich? Try this combo that takes classic tomato soup up a notch with the addition of fennel. The “inside out” sandwich sounds trickier than it is—crispy cheesy outside and creamy cheesy inside.

Tomato-fennel soup

1 large onion, thinly sliced

1 tablespoon sugar

7 tablespoons olive oil

4 cloves garlic, thinly sliced

2 fennel bulbs, thinly sliced, green tops chopped and reserved for garnish

1 tablespoon fennel seed

2 tablespoons tomato paste

¼ cup Pernod

20 ounces tomato puree

2 cups vegetable stock

2 tablespoons butter

Salt and pepper to taste
